Diameter sets the number of portions, height the volume of the dessert layers. Low rings suit tarts and bases, tall rings suit multi-layer assemblies. Consider a set of several sizes to cover your usual production.
Ring or closed pan?
An open ring allows top release after chilling and easy work with a spatula. For a solid base, look to the round cake pan or the sponge cake pan.
Which material and care?
Stainless steel is preferred for its rigidity and oven resistance. Lining with an acetate strip makes unmolding delicate preparations easier. For flexible formats, see the silicone mold.
