Why choose a Gobel ring for plated pastry work?
Gobel stainless steel rings are produced to the tight dimensional tolerances demanded by professional pastry: an entremets assembled in a Gobel ring unmoulds cleanly and keeps its geometry. The wall height, calibrated for classic recipes (mousse, biscuit, crisp), avoids the need for adjustments during assembly.
What's the difference between an opera frame, an entremets frame and a ring?
The opera frame is rectangular and shallow, designed for layered assembly of opera cake or rolled biscuits. The entremets frame is taller. The round ring is used to plate a single entremets or form a tart. Gobel offers these three families in standardised dimensions that match standard 600×400 mm pastry sheets.
Which Gobel mould coating should I choose for each pastry?
Gobel offers several complementary finishes. Traditional blued tinplate ("blanc bleu") is the historic French pastry standard: it browns crusts well and remains the reference for puff, shortcrust and sweet doughs — grease it before baking. Non-stick moulds make unmoulding easier for cakes, sponges and madeleines, and suit more delicate pastries. Stainless steel, more inert, is preferred for cold-assembly rings and frames (entremets, mousses, rolled biscuits).
