Choosing your petit-four pans

Which material should you choose?

Tinplate and steel are the most common materials for petit-four pans: they conduct heat quickly and suit repeated batches. Non-stick versions make releasing delicate preparations easier, while rigid trays hold their shape during baking. For very soft batters, a silicone mold can be a useful complement.

Which format for which use?

Mini cake pans come in various shapes — boats, rounds, fluted or individual tartlets — and in several diameters. For hospitality use, multi-cavity trays produce consistent batches in a single bake. Single pieces are better suited to small quantities and recipe trials.

Find every format in our Mini cake pan section, and explore other baking pans such as the pie pan or the sponge cake pan on AZ Boutique.
