Choosing the right gastronorm equipment
How do you read GN dimensions?
The GN standard defines a base size (GN 1/1, i.e. 530 x 325 mm) and its fractions: 1/2, 1/3, 1/4, 1/6, 1/9, as well as 2/1. Depth is added on top, expressed in millimetres (20, 40, 65, 100, 150, 200…). This modular system lets you combine several containers on the same equipment and make the most of your worktop.
Which material for which use?
Stainless steel suits cooking, hot holding, bain-marie and cold use thanks to its strength and hygiene. Food-grade plastic, lighter, is dedicated to chilled storage and transport. The perforated pan is reserved for draining and steaming.
Should you plan for lids and racks?
For preservation and stacking, pair each container with a lid in the matching GN format. For storing and moving in volume, a gastronorm trolley holds several containers on runners.
