Choosing the right pot
Which diameter and capacity should I choose?
The choice depends on the number of guests and the type of preparation. For sauces or small quantities, a pot under 20 cm is enough; for everyday service, opt for a 20 to 30 cm format; above 30 cm, you cover the needs of catering and large quantities of stocks or broths.
Which material should I favour?
18/10 stainless steel remains the benchmark in professional settings for its strength, hygiene and longevity. Aluminium offers more responsive heating and lighter weight, while copper allows precise temperature control. Non-stick models make cleaning easier.
Is it compatible with my heat source?
Check compatibility with your hob type. An induction pot has a ferromagnetic base suited to induction hobs. For a kitchen equipped with several sources, an all hobs pot ensures complete versatility.
Stockpot or Dutch oven?
The pot is taller than it is wide and suits large-volume cooking and liquids. For preparations needing more base surface, consider a stockpot or a saute pan.
