An oval cocotte is measured along its longest dimension. Allow 23 to 27 cm for a chicken or a family roast, 29 cm and above for a large cut or a whole fish. The longer the cocotte, the heavier it is, so check that it stays easy to handle and fits your oven. Enamelled cast iron and care
Enamelled cast iron works on every heat source, induction included, and in the oven. The matte black interior of Staub models encourages searing and withstands long cooking.
