Choosing the right cast-iron casserole

Which shape: round or oval?

The round dutch oven suits most preparations and fits round burners well. The oval cocotte is preferred for elongated cuts such as roasts, poultry or whole fish.

Which size for how many guests?

Diameter is chosen according to the quantities prepared. Models under 20 cm suit small portions, the 20 to 30 cm formats suit family meals, and casseroles over 30 cm suit large gatherings and catering.

Which colour and what maintenance?

Beyond the classic black, coloured casseroles add a decorative touch for table service. The enamel makes maintenance easy: washing in lukewarm water is usually enough, avoiding thermal shocks to preserve the coating.
