Why a truffle mandoline?

The truffle mandoline has a reduced format (18 x 7 cm) and a very fine blade designed specifically for ultra-thin truffle slicing. It is a dedicated tool used at plating time, held by hand over the dish. For other uses, a larger-format mandoline remains more versatile and comfortable.

What is the difference between the 38-blade and the reversible-block models?

How do I maintain a Bron Coucke mandoline?
