Choosing your pie pan
Fixed or removable base?
A removable base makes it easier to unmould a delicate tart without damaging its edge. A fixed base, often in porcelain or ceramic, suits going straight from oven to table for quiches and savoury pies.
Which diameter to choose?
Common diameters range from about 20 to 30 cm. Select the size according to the number of portions served and the desired depth of filling. Fluted edges give a clean release and a neat presentation.
Which material for which bake?
Steel and tinplate conduct heat quickly and help achieve a well-browned pastry. Porcelain and ceramic provide a gentler bake and good heat retention for serving.
