Capacity should be chosen according to the volumes you work with. A medium model is enough for a mix or a family dough; a large format suits proving brioche dough or a professional mise en place.

Food-grade plastic is light, impact-resistant and easy to clean. They are ideal for cold mixing and resting doughs; for work over a bain-marie, opt for a stainless steel mixing bowl instead.
