Why is the Paris collection well-known?
The Paris mill is the contemporary reinterpretation of the Z model created by Peugeot in 1874. It is the iconic French pepper mill, found on home tables as well as in starred kitchens. Its signature: a two-stage steel mechanism (crushing then grinding) with a lifetime mechanism guarantee announced by Peugeot and, on modern versions, the u'Select adjustable grind.
What is the difference between pepper and salt?
The mechanism differs: the pepper version uses a standard steel suited to hard peppercorns; the salt version uses a stainless mechanism resistant to salt corrosion. So a pepper mill should not be used for salt, and vice versa. Tell them apart: the top knob differs and the packaging is marked "pepper" or "salt".
Which size of Paris mill should I choose?
