This 10cm paring knife made in Nitrum stainless steel is part of the Kyoto series by Arcos and is characterized by its ergonomic and minimalist design coupled with the exclusivity of its double-sharped blade.
The Kyoto kitchen knives series is forged from a single piece of hardened, taking an exclusive and high quality steel as a starting point: NITRUM. Indeed, Nitrum is a nitrogen enriched, eco-friendly stainless steel formula. It permits to improve the hardness, to enhance the cutting power, to improve the durability and also the microstructure of all the kitchen knives.
The strength of the handle and its novel design combined with the colour of the metal with its contrasting black, gives to this paring knife a touch of class and elegance. Manufactured from forged stainless steel and polyoxymethylene (POM), this paring knife has a really beautiful finish, is detergent resistant and has a high tolerance to wear and tear as well as resistance to high and low temperatures (from -40 to +150°C).
After exhaustive researches and investigations, Arcos has raised the bar higher by developing an innovative blade edge in its Kyoto series of kitchen knives that reaches a CIC value of 98mm (minimal value : 50mm ) and a TC value of 500mm (minimum value 150mm). The CIC of the knives is calculated by making the sum of the edge thickness from the first 3 cycles and the TC is calculated by making the sum of the edge thickness from a total of 60 cycles. This test allows then to determinate the blade quality and to proove that the Kyoto knives have a high quality blade.
Use: the paring knife is an universal kitchen knife. The "usual knife", also known as office knife, is an incontrovertible element of the kitchen, notably to cook the the meats and the vegetables.
