What is a whipper used for in the kitchen?

A whipper turns a liquid preparation into a mousse or espuma by incorporating N2O gas under pressure. Classically used for whipped cream, it also makes savoury foams (vegetable, cheese or stock espumas), aerated sauces and modern signature-cuisine preparations. The charger releases its gas, the whipper is shaken, and the piston delivers a stable foam.

Which capacity to choose?

50 cl suits home use or individual restaurant servings. 1 litre is aimed at professional kitchens or volume service (banquets, large brunch). Choose the capacity that matches each preparation's volume: a half-filled whipper does not work correctly.

How many chargers for one litre of preparation?

Generally, one 8 g N2O charger is enough for 50 cl of liquid, two chargers for 1 litre. Refer to the whipper's instructions for the exact ratio. Too much gas can rupture the preparation, too little gives a flat foam.

How do you maintain a whipper?

Disassemble the head after each use, remove the seals and valve, and rinse the parts in hot soapy water. A dried foam clogs the valve and prevents the whipper from working properly next time. Store disassembled to preserve the seals.
