This 19cm fillet knife made in Nitrum stainless steel is part of the Colour Prof series by Arcos which is characterized by the possibility of identifying the knife upon a code colour (blue, white, red, green, brown, yellow).
The Colour Prof kitchen knives series is made in high quality steel as a starting point: NITRUM. Indeed, Nitrum is a nitrogen enriched, eco-friendly stainless steel formula. It permits to improve the hardness, to enhance the cutting power, to improve the durability and also the microstructure of all the kitchen knives.
The ergonomic and slip-resistant handle contrasts with the stainless steel colour of the blade and provides to this fillet knife a firm and comfortable grip thanks to its rubber as it may be used to separate nerves out of the meat.
The fillet knife is characterized by flexibility of its blade made in inox and which allows to come the nerves off the meat flesh, like kidney.
