The souffle is a great classic dish of French cuisine that can be either salty or sweet.  It is associated with two famous chefs in the history of French gastronomy: the 18th century Chef Vincent la Chapelle and the 19th century Pastry Chef Antonin Carême. How to choose the right 2 quart souffle dish, souffle pan or ramekin ?

To make it easier for you, we recommend that you choose a white porcelain dish or pan that will promote good heat distribution and even cooking of your preparation. Moreover, porcelain is very hygienic and can bring a very aesthetic side to your presentation if you decide to serve your soufflé in its mould itself without going through the demolding step.

As for the shape, choose a rather narrow porcelain soufflé dish with high enough edges to allow the dough to rise to its maximum. Moreover, it is not recommended to fill up the ramekin more than ¾ above the rim in order to leave the necessary space for the soufflé to rise as much as possible. From the outset, the mould must allow the heat to be diffused evenly, as a classic gratin dish or mould would allow. It will be useful to butter and flour your mold well to allow you to easily unmould your soufflé.

Always stick to the the recommended oven temperature and cooking time to maximize your chances of success. Whether you serve it as a main course or as a dessert, the soufflé is eaten hot (as after 30 minutes outside the oven, it collapses).
