Which use and which shape?

First identify the target preparation: layered dessert, moulded piece, individual portion or unusual format. The mold's shape and capacity determine the final result and how it releases. Check the dimensions to match your oven and trays.

Which material to favour?

Depending on the reference, you will find molds in steel, tinplate or ceramic. The brands available in this section, notably Paderno and Ibili, offer sturdy models suited to regular use. Service porcelain and ceramic allow going straight from oven to table.
