What is special about the Friodur® process?
Friodur® is the ice-hardening process developed and patented by Zwilling. After traditional tempering, the blade is cooled to very low temperatures, which stabilises the crystalline structure of the steel. The result is higher hardness, a cutting edge that holds its sharpness longer, and improved corrosion resistance. It is the signature treatment of all Zwilling premium ranges (Four Star, Professional S, Twin Four Star II).
How should I care for and sharpen a Zwilling knife day to day?
To preserve the high hardness delivered by Friodur® ice-hardening, hand wash with warm water and mild soap, then dry the blade right away: the dishwasher, with its salts and the knocks between items, gradually wears both the edge and the tri-riveted handle. Between full resharpenings, a few passes on a honing steel realign the edge. For deeper sharpening, a medium-to-fine grit stone suits Zwilling European blades, respecting the original blade angle indicated on the product sheet.
