Choosing your teapot
With or without a built-in filter?
A removable built-in filter lets you brew loose-leaf tea directly in the teapot and then lift out the leaves to stop the infusion. Without a filter, the teapot is dedicated to serving after brewing separately. Choose according to your brewing habits and the type of tea you use.
Which material for which use?
Porcelain, from Pillivuyt or Guy Degrenne, retains heat well and dresses the table; glass, as with Bodum, showcases the colour of the brew and withstands thermal shock; stainless steel, offered by Eternum, copes with intensive hospitality use and limits breakage.
What capacity should you plan for?
A teapot of 0.3 to 0.5 litre suits individual service or service for two; for the family table or table service, favour a capacity of one litre or more. Check the grip of the handle and how cleanly the spout pours.
