Food-grade silicone makes demoulding easy for delicate preparations (mousses, entremets, chocolates) and handles freezer and oven up to 220-260 °C depending on professional models. Metal (aluminium, stainless steel) is preferred for traditional zuccotto moulds, long oven bakes or classic assembly without quick demoulding.

How many cavities to choose?

For home use or small batches, 6 to 8 cavities are enough. For a pastry batch or volume service, choose 15 or 24 cavities. Pomponette-type 24-cavity moulds are dedicated to small petits fours (3-3.5 cm diameter), for sweet canapés and chocolate shells.

How do you use a half-sphere mould for an entremets?

For a spherical entremets, pour the preparation into two half-sphere cavities, freeze, demould, then assemble the two halves by briefly warming the edges to seal them. The silicone mould eases this step thanks to clean demoulding that preserves a perfect roundness.

Oven and freezer compatibility?

Paderno food-grade silicone handles the freezer (-40 °C) and the oven (around 260 °C depending on models). Check the exact model's sheet for the maximum temperature. Metal versions go in a standard oven; check the sheet for induction use (zuccotto moulds are rarely intended for the stove).
