What is the difference between Super and Familia Wiss jars?

The Super jar is Le Parfait's historic model: mechanical lever, round rubber seal, separate glass lid. It opens and closes indefinitely — the seal being the only part to replace. The Familia Wiss uses a screw-on metal lid with a built-in flat seal: the lid is single-use for vacuum sealing, making it the reference format for terrines and long-keep confits.

How do I succeed at home canning with a Le Parfait jar?

For successful canning, the jar and its seal must be clean and intact. Fill to 2 cm from the rim to leave the necessary headspace for the vacuum, close, then sterilise in a water bath or steriliser for the time required by the recipe (from 30 minutes for jams to 3 hours for meat). On cooling, the seal forms the vacuum that signals a successful preserve.

How can I check that a Le Parfait jar is properly sealed?

For a Super jar, after cooling, gently lift the glass lid without the clip: it should remain held by vacuum. For a Familia Wiss, the centre of the metal lid should be slightly indented inward. If the lid bulges or clicks, the vacuum has not formed: the preserve must be eaten quickly or restarted.

Do I need to change Le Parfait seals after every use?

For Super jars, the red rubber seal should be replaced for each new sterilisation: it is the wear part that ensures the vacuum's integrity. The glass lid and metal clip last for decades. Le Parfait sells replacement seals for every format to allow long-cycle use of the original jar.
