Bread knife
The bread knife is recognised by its long, strongly serrated blade, designed to cut through a thick crust without crushing the crumb. With a simple sawing motion and no pressure, it slices baguettes, country loaves and hard-crusted breads while keeping a clean cut. Useful day to day as well as in catering and bakery work, it also handles pastries and viennoiseries. Our Bread knife section includes long, hard-wearing stainless-steel blades suited to regular use.

Choosing the right bread knife
What length and serration?
For large loaves and thick-crusted breads, a blade of 20 to 26 cm gives the reach needed to slice in a single pass. The serration, whether wide-toothed or micro-serrated, should bite into the crust on its own: cutting comes from the back-and-forth motion, never from pressure, which avoids crushing the crumb.
Which handle and what care?
A handle offering a firm, secure grip makes the sawing motion easier, especially on the hardest breads. The stainless-steel blade is simple to clean; hand washing and careful drying preserve the serrated edge, which is trickier to re-sharpen than a plain blade.
The bread knife is part of our Specific knife section, alongside the cheese knife and the cheese / foie-gras lyre. Browse the full kitchen knife range on AZ Boutique, with brands such as Victorinox, Arcos and Opinel.
