Choosing the right chef's knife
Which blade length?
Blades from 15 to 18 cm suit precise tasks and smaller hands, while blades from 20 to 25 cm make it easier to work with large pieces and chop in volume. The choice depends on the size of your preparations and how comfortable you are with a large knife.
Forged or stamped?
A forged blade, thicker at the heel, offers weight and balance, ideal for intensive use. A stamped blade, lighter, stays nimble and affordable. Both types, in stainless steel, keep a good edge when maintained regularly.
