Those aniseed-flavoured drinks are made of plants such as star anise, green anise or fennel and alcohol. You have to be very careful with the flow of the absinthe when you pour it on your spoon : you really have to do it drop by drop, otherwise the glass will be filled with alcohol before the sugar has had time to melt !
